Shopping and baking with #EqualCanada

Most days I can be very organized and get a lot accomplished, and then there are days like today. I had put off my trip to London to Walmart for a day when we had some time, and got up this morning planning to make my shopping trip and do some baking. Then my husband reminded me that it’s Family Day and Walmart was likely not open. He was right. This was not only a problem because I needed to do a shop for Equal, but also because I needed some shoes for a trip that I’m leaving for in the morning.

Lucky for me, not all Walmarts were closed. I looked over the recipes at www.equal.com and decided that I either wanted to make the strawberry pie or the apple crisp. Then I made my grocery list showing what I would need for either recipe, and I mapped out my drive to Walmart. It was a bit of a road trip, but I took off to Mississauga to look for Equal and get some shoes. It was a nice drive on a beautiful day.

When I made it to Walmart, I realized that everyone across the province had the same idea as me. The traffic was incredible and it took nearly half an hour to score a parking spot. You can see all of the cars lined up looking for spots below.

I got inside and went looking for the pharmacy, because I know from past shops that the Equal is kept there. And guess what? I found it in record time! The Equal Sucralose Canister was $7.97. I put it in my basket and went to find a hair colour. This took me a lot longer to find, and I picked up an eyeliner while I was looking for it, and then I headed to the shoe section.

I found a nice pair of comfortable heels, and then my husband texted me asking me to get him some tshirts. I figured they were for work, where they get ruined in no time, so I found a couple of very inexpensive tshirts and decided to make my way out of the store. I grabbed a bottle of diet pepsi while waiting in line.

Most of the traffic had cleared out by the time I got outside, or at least I thought so until I was trying to leave the parking lot. That took another 20 minutes, with the help of a police officer directing traffic, and then I was on my way home. About halfway there I realized I didn’t look at my list or buy my grocery items. Thankfully I knew I had everything for apple crisp at home, but I would have to half the recipe.

Grandmas Apple Crisp

A traditional apple crisp with cinnamon flavored sliced fresh apples with a crunchy oat and nut topping, but with 39% less calories per serving. Serve it warm with a scoop of frozen vanilla

Serves: 6
Ingredients
FILLING:
6 cups peeled and sliced Granny Smith apples
1/2 cup Equal® Spoonful or Granulated*
1/4 cup water
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon

TOPPING:
3/4 cup quick or old-fashioned oats, uncooked
1/3 cup all-purpose flour
1/4 cup Equal® Spoonful or Granulated**
1/4 cup chopped pecans
3 tablespoons stick butter or margarine, melted
1/2 teaspoon ground cinnamon

* May substitute 12 packets Equal sweetener
** May substitute 6 packets Equal sweetener

Preparation

  • For Filling, combine apples, 1/2 cup Equal®, water, flour, lemon juice and cinnamon. Toss gently to coat apple slices. Place in an 8-inch square baking pan.
  • For Topping, combine oats, flour, 1/4 cup Equal®, pecans, melted butter and cinnamon. Stir until mixture is crumbly. Sprinkle evenly over apple mixture.
  • Bake in preheated 350° F oven 30 to 35 minutes or until apples are tender and topping is crisp. Remove from oven. Serve warm or at room temperature.

I divided the recipe in half since I didn’t have enough apples. It turned out really nice. I would never have known it wasn’t sugar if I didn’t make it myself…and it was very easy to make too. I will definitely make it again.
